The cooking appliance 10 is constructed from modular sections 12A- 12D each having a top panel 14 , side walls 16 , 17 and a bottom panel 18 supported in a frame 20 . The modular sections are connected end to end to enclose an elongated process chamber, in this example a cooking chamber 22 , which is normally closed except for inlet ports 24 and outlet ports 25 at both ends. Doors 26 on the side walls of each modular section allow access to the cooking chamber for maintenance, cleaning and inspection. Steam or other cooking gases are released into the cooking chamber through steam ducts 27 through the floor of the modular section.

Abstract

Continuous product processing equipment having a conveyor capable of repositioning product and clearing debris from itself and method of operation thereof. The apparatus includes a conveyor that conveys the product along a carryway on top of the conveyor belt to the processing chamber. Upper and lower diverting rollers guide the belt along the S-shaped product repositioning path segment of the carry path. The diverting rollers are rotated at a speed generally greater than that of the belt so that the belt slips on the outer circumference of the rollers, which exerts a scraping action on the delivery side of the belt to remove debris from the belt and rollers. One-way ratchet drives located on product repositioning path segments or belt restraints to limit belt drift are used to prevent belt buildup along the carry path and tensioning in the lower return path.
