The preparation method comprises the following steps: (1) selecting, washing and airing the red dates; fully steaming the aired red dates by a pressure cooker; and then, airing the steamed red dates again; (2) boiling the white sugar in the water, and then, heating the mixture to 119 DEG C so as to brew a syrup; (3) pouring the air-dried red dates into the syrup; continuing brewing; and then, heating the syrup and the red dates to 120 DEG C; (4) pouring the syrup and the red dates into a container; putting a press block into the syrup, so that the red dates float on the syrup are pressed under the syrup by the press block for the densities of the red dates are smaller than the density of the syrup; putting the container in a thermal insulation room for 7-10 days until the moisture in the syrup is volatilized and crystals are formed; (5) inverting the container containing the red dates and the syrup on a vessel for 15-24 hours so as to completely drain the non-crystallized syrup; and (6) beating the crystallized syrup and red dates in the container into pieces, so that the crystal sugar-red dates are prepared.
