The making method comprises the following steps that: the edible oil is put into a pan and heated to be between 120 and 160 DEG C; the lean meat is cut into shreds, put into the pan and stir-fried to be cooked; the ginger is cut into uniform shreds, put into the pan and stir-fried; the wild pepper and the salt are put into the pan just before the ginger is stir-fried to be dry; the monosodium glutamate and the sesame are put into the pan when the ginger is stir-fried to be dry; and the ginger is stir-fried again and then taken out from the pan, thus the shredded ginger with meat flavor is done. The shredded ginger with meat flavor is superior in taste and has health functions. As the making method changes the ginger from a cooking seasoning into a delicious common dish, the method has the advantages of expanding the uses of the ginger, increasing the consumption of the ginger, necessarily ensuring the price rise of the ginger and raising the income of ginger planting.
