Abstract

The invention relates to the field of detection of freshness of fish, and in particular relates to a method for detecting the freshness of trichiurus haumela through an electronic nose, which aims at overcoming the shortcomings that the operation in measurement process is complicated, a base line of a sensor is easily drifted, and the measurement result has low reliability in the prior art. The method comprises the following steps: placing a trichiurus haumela sample to be detected into a gas collecting bottle; vacuuming the bottle; standing; absorbing gas emitted by the trichiurus haumela sample to be detected into an electronic nose chamber; detecting the gas through a gas sensor array in the electronic nose chamber; collecting the data collected by the gas sensor array; carrying out load analysis on the collected data; and determining the freshness of the trichiurus haumela sample to be detected according to the ratio of the sum C of contribution rates of a volatile oxynitride, a volatile sulfide, a volatile organic sulfide and an aroma constituent under the load analysis to the total contribution rate C0 of all the volatile constituents. The method has the advantages that the operation is simple and convenient, the base line of the sensor is stable during measuring process, and the reliability of the measurement result is high.
