Embodiment Construction

[0011] A method for extracting pectin from lemon peel, comprising the steps of:

[0012] (1) Wash and crush the lemon peel to a particle size of 2-3 mm, then soak in boiling vinegar for 5-8 minutes, and rinse with water for several times;

[0013] (2) Add 3 times the amount of water, 3% of the amount of activated carbon, and 5% of the amount of attapulgite to the fresh lemon peel, refine it, heat it to 80-95°C, add vinegar to adjust the pH to 1.5 , keep warm for 60 minutes, filter, to the slurry and filter residue;

[0014] (3) Add salt equivalent to 4% of its weight and 1% Na2SO3 to the filter residue, mix well, inoculate lactic acid bacteria and yeast, ferment for 3 days, add water to make a slurry, heat to 50-55°C, add citric acid to adjust The pH value is 2, and the slurry is obtained by filtering to remove the slag;

[0015] (4) Combine the slurry and filtrate, add 95% edible alcohol to precipitate the pectin, then wash repeatedly, and then dry to obtain the finished pe...

Abstract

The invention discloses a method for extracting pectin from lemon peels. The method comprises the following steps of: washing lemon peels and crushing the lemon peels to the particle size of 2-3mm; then, placing the crushed lemon peels into boiling water for soaking for 5-8min; washing the lemon peels by using clear water several times; adding water accounting for 3-4 times the amount of the lemon peels, activated carbon accounting for 3-5% the amount of the lemon peels and attapulgite accounting for 4-5% the amount of the lemon peels into the lemon peels; grinding to obtain a pulp; heating the pulp to 80-95 DEG C; adding table vinegar to adjust the pH value to 1.5-2; keeping the temperature for 60-80min; and filtering to obtain pulp and filter residues. A pectin product obtained by the invention is white and contains over 70% of pectin and few impurities.

Description

technical field [0001] The invention relates to a method for extracting pectin from lemon peel. Background technique [0002] Pectin is a natural polymer compound with good gelation and emulsification stability, so it has been widely used in food, medicine, daily chemical and textile industries. At present, the extraction method of pectin has been using the traditional acid and enzymatic extraction methods, because the extraction process is long, the extraction rate is low, and there are many impurities. Contents of the invention [0003] The invention provides a method for extracting pectin from lemon peel, which has high extraction rate and less impurities. [0004] The present invention is realized by implementing the following technical solutions. [0005] A method for extracting pectin from lemon peel is characterized in that it comprises the following steps: [0006] (1) Wash and crush the lemon peel to a particle size of 2-3mm, then soak it in boiling vinegar for...
