Abstract

The invention discloses a method for extracting and preparing a protease from water lettuce roots. The method comprises the following steps of: mincing and homogenating fresh water lettuce roots and extracting by using water or a phosphate buffer solution; precipitating the extract by using an organic solvent and separating the protease, and then drying the protease, thereby obtaining high-activity protease powder. The method disclosed by the invention is used for producing high-activity protease from water lettuce; and therefore, the method is capable of changing wastes into things of value, energy-saving and environment-friendly, simple to operate, low in product production cost and convenient for large-scale production.
