Abstract

The invention discloses a tea leaf fixation method for small pot tea based on gas heating processing in the technical field of tea leaf fixation. The tea leaf fixation method comprises the following steps: (1) cleaning tea leaves; (2) tedding the tea leaves; (3) performing fixation on the tea leaves; and (4) supplementary fixation on the tea leaves. In the method, fresh leaves are soaked in rice washing water, and the rice washing water is weakly acidic, can decompose pesticides remaining in the tea leaves and improve safety of the tea leaves. According to the method, roller fixation and pot fixation are combined, after roller fixation is completed, high-temperature pot fixation is utilized again, activity of oxidase in fresh leaves can be rapidly destroyed and passivated, and enzymatic oxidation of tea polyphenol and the like is inhibited. Meanwhile, tea oil is uniformly smeared in the pot, so that the tea leaves are prevented from being directly burnt due to over-high temperature, fixation quality is improved, fragrance emitted by the tea oil can reduce green odor generated by fixation, and fragrance of the tea leaves after fixation can be further improved.
