Abstract

The technological scheme of the present invention is that taurine is added into beer to produce functional taurine beer. The production process includes saccharification of beer wort, filtering, adding hop, boiling, separating hop from beer, cooling, adding taurine, filtering to obtain beer product. The added amount of taurine is 0.010-0.050 wt%. The functional taurine beer can lower cholesterol, resisting lipoid peroxidation and prevent blood fat raising, and the taurine can excite the activity of acetaldehyde dehydrogenase so as to lower or remit the inhibition of acetaldehyde as the primary metabolism product of alcohol in beer on human body's central nerve system and to protect liver and stomach mucous membrane.
