[0026] For each recipe, the powders are mixed first, dissolved in water, then the liquid is transferred to glass bottles and pasteurized in a hot water bath. The total heating and cooling time is approximately 20 minutes, with at least 10 minutes remaining at the end to keep the product at 95-100°C.

[0027]The data showed that the addition of calcium chloride, calcium gluconate lactate, and in situ formed calcium citrate improved stability against calcium precipitation in the sugar-free formulation compared to other formulations. Other formulations include: 1) calcium gluconate lactate alone; 2) calcium citrate formed in situ only; 3) a combination of calcium gluconate lactate and calcium chloride; 4) calcium chloride and lemon formed in situ Calcium acid composition. No comparison has been made with this formulation since the use of calcium chloride alone resulted in a formulation with a salty taste and unsuitable for commercial sale.

Abstract

A calcium fortified acidic beverage, wherein the calcium comprises: 1) calcium citrate, calcium malate, or calcium malic citrate formed in situ from citric acid, malic acid, and compounds of malic acid and citric acid, respectively, and either Calcium salts selected from calcium hydride, calcium oxide, calcium carbonate and their mixtures are reacted to form; ii) calcium chloride; iii) calcium gluconate lactate. Calcium-fortified acidic beverages are stable for extended periods of time at room temperature and elevated temperature without the formation of calcium precipitates.

Description

technical field [0001] The present invention relates to a calcium fortified acidic beverage which does not form calcium precipitates upon prolonged storage at room temperature and elevated temperatures. Background technique [0002] Calcium is the most abundant mineral in the human body and is a major building block of bones and teeth. Calcium is also closely related to physiological systems, such as the coagulation of blood, the increase of cell membrane permeability, the activation of some biological enzymes and as a component of nerve transmission and muscle contraction. Calcium deficiency may be a factor in the development of osteoporosis in the elderly. [0003] Since the human body cannot produce calcium, it is entirely dependent on external supplies, either through food or supplements. Calcium can be obtained from a variety of different diets, the main source being dairy products, especially milk. However, under normal circumstances, the amount of milk that people ...
