The fruit is dark green with a flattened base, offering an excellent shelf life and a creamy / nutty flavor profile, complemented by a favorable pulp-to-seed ratio. An extrusion method for extracting oils from the fruit pulp of plants of the genus Persea spp., comprising: selecting fresh fruits of Persea spp. plants; disinfecting the selected fruits with a sodium hypochlorite solution; obtaining the fruit pulp; mixing the obtained pulp for homogenization; subjecting the pulp from the previous step to extrusion conditions using an extruder for the pre-treatment of avocado pulp; and recovering the oil. Oils from the fruit pulp of plants of the genus Persea spp., obtained by the extrusion method described in the present invention.
