Abstract

The purpose of this invention is to provide a preservation storage process for ensuring the cherry quality and water content. The present invention solves the technical scheme as follows: 1) picking cherries: after picking cherries from an orchard, soaking in a peracetic acid solution with 0.35% of concentration; 2) cleaning and dripping: cleaning the cherries, trimming and dripping in a drying device; 3) packaging by filling with gas: filling the cherries in a vacuum packaging bag under aseptic environment, filling gas composed of carbon dioxide with 3-5% of concentration ratio, oxygen with 4-6% of concentration ratio and nitrogen with 89-92% of concentration ratio for packaging; 4) processing by sterilization: placing the packaged cherries under a bactericidal lamp for 30 minutes for sterilization treatment; 5) storing in a fresh preserved storehouse: placing products into a freezer for storing at 2 DEG C.
