According to the control method, expert experience-based fuzzy control simulation is carried out through the following steps that: residual sugar concentration in a tank and the change rate of the residual sugar concentration are adopted as the input of fuzzy control, and a sugar supplementing rate is adopted as output; the input and output linguistic variables of a model controller are determined, so that a domain of discourse and a control method can be determined; a quantization factor and a scaling factor are obtained; the membership functions of the input and output of the model controller are provided; the fuzzy control rules of the model controller are obtained; and a clearness algorithm is adopted. When the method is used on line, a computer controls a constant flow pump to extract fermentation liquid and dilute the fermentation liquid, and then controls a YSI2700 online analyzer to carry out analysis; and a lag detection value is introduced into a designed fuzzy controller, and a sugar supplementing rate in a control period can be obtained.
