Abstract

The invention relates to the field of micro-algal oil DHA microencapsulation processing, specifically to microencapsulated DHA micro-algal oil containing antioxidant peptides and a preparation method thereof. Whey protein concentrate and Arabic gum serve as microcapsule wall materials, the antioxidant peptides generated by fermentation of natural whey protein are added into the DHA micro-algal oil, a complex-coacervation method and a spraying drying method are utilized to prepare the microencapsulated DHA micro-algal oil containing the antioxidant peptides, and the shortcoming of low oxidation stability caused by the fact that the DHA micro-algal oil oxidizes easily is overcome. After the prepared DHA micro-algal oil is stored for 25 days, the peroxide value of the DHA micro-algal oil is reduced by 8 meq/kg or above compared with when no DHA micro-algal oil without the antioxidant peptides, and the microencapsulated DHA micro-algal oil is high in oxidation stability and high in sensory value. The prepared DHA micro-algal oil is wide in applied range, can serve as functional factors to be applied to industries such as medicine, food and feed, particularly to infant foods having strict regulations on additives, and the microencapsulated DHA micro-algal oil is favorable for improving memory and enhancing brain development and the like.
