Abstract

The invention discloses a PSE-like chicken judging method based on near infrared spectroscopy in the technical field of food detection. The method comprises the following steps: collecting the near infrared spectrum of a chicken sample, and measuring the pH value after 24h since slaughter; preprocessing spectral data to obtain a target matrix, and dividing the matrix into a calibration set and a prediction set; and establishing a prediction model on the basis of the samples in the calibration set and corresponding spectral data and the measured pH value after 24h since slaughter, and evaluating the prediction accuracy of the model. The method disclosed by the invention is simple and easy and quick in operation; and without special pretreatment on the sample, the method is widely applicable to the chilled products sold on the market as well as the forefront of industrial production.
