In the model building stage, target pollutant calibration set samples with different concentrations are prepared, infrared spectrums of the target pollutant calibration set samples are collected, and a quantitative calibration model is built in combination with a chemometrics method after pretreatment. A sample detection stage: performing the same pretreatment on a to-be-detected sample, collecting a spectrum, inputting the spectrum into the established model after the same pretreatment, and directly predicting the pollutant concentration of the to-be-detected sample; according to the method disclosed by the invention, by optimizing spectrum pretreatment and chemometrics modeling, the interference of a complex matrix of food is overcome, and rapid, lossless and accurate detection on chemical pollutants such as pesticide residues and illegal additives is realized; the method has the remarkable advantages of simplicity and convenience in operation, low cost and high efficiency, and is suitable for rapid screening and quantitative analysis of various foods.
