Abstract

The invention discloses a blueberry quick-freezing technology. The technology has the following main points: (1) variety selection: variety selection is shown below; (2) ripeness degree determination: completely ripe blueberries have low hardness and a high moisture content causing high transportation cost and high storage cost, so that 80% ripe blueberries are preferably harvested; (3) selection and grading: simple selection of raw materials is performed to remove fruits which are soft, rotten, diseased and wormy, and fruits which achieve acceptance standards are graded based on the ripeness degree, and fruits which are not proper for instant production are marked and stored in a refrigerating cabinet and are put into production at the right time; (4) rinsing: a bubble washer special for blueberries is adopted to rinse the selected blueberries to remove floating impurities and calcium treatment can be adopted to keep blueberry hardness; (5) drying: a cold-air dryer is used to quickly remove the surface water of the rinsed blueberries in a low-temperature environment to prevent the blueberries to be quick-frozen from sticking to each other; and (6) quick-freezing: the faster a cooling rate is, the smaller the generated ice crystals are, so that a highest possible cooling rate is regarded as an ideal way to obtain high-quality frozen food.
