The preparation method comprises the following steps: weighing 0-40 parts of the absolute ethyl alcoholand 20-80 parts of the distilled water and putting into a beaker, weighing 10-40 parts of the sucrose and adding into the beaker, and stirring until the mixed liquid is completely dissolved so as toobtain saccharose liquid; adding 0.2 part of the edible pigment, and evenly mixing to obtain the edible jet printing ink. The edible jet printing ink provided by the invention is simple in preparationtechnology, low in price of the preparation raw materials, easy in obtaining of the preparation raw materials, good in printing performance and non-toxic.
