Abstract

The construction method comprises the following steps: S1, detecting chicken fatty acid compositions and relative contents under different conditions; S2, performing Pearson correlation verification on the fatty acids obtained in the step S1, and if significant correlation does not exist between the fatty acids, using the fatty acids to construct a chicken quality fatty acid evaluation model; if the fatty acids have significant correlation, further determining a core fatty acid through OPLS-DA discriminantanalysis of a supervised classification model; and S3, carrying out weight distribution of the core fatty acid through an analytic hierarchy process, and acquiring a fatty acid evaluation model used for obtaining the chicken quality, wherein the fatty acid evaluation model is that a comprehensive evaluation score of the fatty acid is equal to the weighted sum of all the core fatty acid scores.
