The synthesis method comprises the following steps: preparing an amphiphilic biological carbon material from beer yeast cells by adopting a hydrothermal synthesis method, grafting chitosan by adopting a covalent binding method by taking the amphiphilic biological carbon material as a carrier, and carrying out structure modification on chitosan carbon residue particles by adopting a chemical method by taking vanillin and glycidyl trimethyl ammonium chloride as modified materials, and obtianing the functionalized carbon residue particles. The functionalized carbon residue particles synthesized by the invention still have high dispersity in polar and non-polar solvents while retaining the advantage of antibacterial property of quaternized chitosan.
