Besides, the invention also comprises a capacitance sensor, wherein the capacitance sensor comprises a first polar plate and a second polar plate, the heating dish is dislocated by the pressure to drive the first polar plate to move corresponding to the second polar plate, the signal of the capacitance change value is generated by changing the distance between the two polar plates, then the signal is inputted to the control circuit to detect and dispose, thus controlling the electric pressure cooker to work. The invention achieves the real-time detection and control of the pressure. As the pressure is continuous and adjustable, different pressure or working time can be chosen according to the condition of different food during the process of cooking. The capacitance value extra generated due to the capacitance sensor being disturbed by the temperature and the electromagnetic is counteracted by the compensating capacitance greatly. The signal quantity is effectively enlarged by the lever device, thus improving the detecting accuracy and the sensibility of the capacitance sensor.
