Abstract

The main materials consist of the following raw materials in percentage by mass: 89 percent of sweet potato paste, 8 percent of auxiliary materials and 3 percent of wrapping powder, wherein the auxiliary materials consist of the following raw materials in percentage by mass: 43.75 percent of white sugar, 32.5 percent of liquid sugar and 23.75 percent of textured soybean protein; and the wrapping powder consists of the following raw materials in percentage by mass: 92 percent of sweet potato powder and 8 percent of modified starch. During manufacturing, the wrapping powder wraps the sized sweet potato-shaped main materials, and the main materials are cooked at the temperature of between 90 and 100 DEG C so that the wrapping powder forms the wrapper. The mini sweet potato can be eaten without peeling after simple baking or microwave heating, and the outer wrapper can beeaten, so the mini sweet potato is convenient and simple, keeps the primary nutrition, and improves the phenomena that the sweet potato raw material is over-dry or over-wet and has coarse fiber and poor mouthfeel; and the small sweet potato has special fragrance of baked sweet potato through a unique baking process.
