The extraction process of polysaccharide in portulaca oleracea provided in the invention is characterized by short time and high extraction rate. The process includes the technological steps of: pretreatment and degreasing; extraction: first adding distilled water into degreased portulaca oleracea powder, with the powder and the water in a ratio of 1:15-1:25, conducting ultrasonic extraction for 25-35min under a temperature of 60-80DEG C and ultrasonic power of 200-280w; pumping filtration, decolorization, and concentration; deproteinization: using double distilled water to dissolve crude polysaccharide, mixing them evenly, and adding the mixture into a mixed solution of chloroform and n-butanol according to a mass ratio of 4:1-5:1, with the m chloroform and the m n-butanol of the mixed solution being in a ratio of 5:1, shaking the newly obtained mixture and taking the supernatant, adding ethanol with a volume of 3-5 times and a mass fraction of 95%, placing the mixture in a refrigerator to stand for 24h, then performing centrifugation so as to obtain the deproteinized portulaca oleracea polysaccharide; and conducting washing.
