Abstract

The invention discloses a method for producing red rice pseudo-ginseng mycoplasma by using pseudo-ginseng residue fermentation. The method disclosed by the invention comprises the following steps: (1) pre-treating pseudo-ginseng residue by means of drying, crushing and sieving; (2) uniformly mixing pre-treated pseudo-ginseng residue, a nitrogen source, a phosphorus source, bran and water in a certain proportion; (3) carrying out steam sterilization treatment on the uniformly mixed materials; (4) inoculating monascus onto the sterilized material to carry out solid-state fermentation; and (5) drying the fermentation culture to obtain the red rice pseudo-ginseng mycoplasma. By adopting the method disclosed by the invention, the pseudo-ginseng residue can be converted into the red rice pseudo-ginseng mycoplasma with unique property and flavor functions.
