Abstract

The method comprises the following steps of (1) performing pretreatment, namely washing fresh winter jujubes, removing jujube pits, cutting the winter jujubes into winter jujube slices having a thickness of 0.8-2mm; (2) performing sterilization and color protection, namely soaking the winter jujube slices in a saline solution havingthe weight content of 0.1-2 percent for 20-60 minutes; (3) performing rinsing, namely rinsing the soaked winter jujube slices with clear water, picking out the winter jujube slices, and performing draining until no moisture exists on the surface of the winter jujubes for later use; (4) drying the drained winter jujube slices for 30-60 minutes; and (6) packaging and sterilizing the dried winter jujubes. The method has no preservative addition, high processing quality and long preservation period, and does not pollute environment and fruit products.
