Abstract

The invention relates to the field of corn processing and particularly discloses a method for preparing corn germs by a new corn soaking process. The method comprises the following steps: soaking pretreated corn in a soaking solution containing vitamin C and performing crushing and separation on the soaked corn to obtain corn germs. According to the method, the vitamin C is used for completely substituting or partially substituting SO2 in a traditional process for soaking corn to achieve a soaking effect equivalent to that of the traditional soaking process, and when the vitamin C is used forcompletely substituting the SO2 in the traditional process, all the products are free of SO2 residue and can achieve an international food standard. The corn germs, corn fibers, corn starch and corn protein obtained by processing after soaking are all directly edible without the need of desulfurization treatment, so a production process is simplified. Furthermore, the soaking solution obtained after soaking is finished contains rich nutrients and can be developed into a nutritional drink or serve as an auxiliary material for food and the like.
