Abstract

The invention relates to the field of corn processing, and particularly discloses a method for preparing corn protein by a novel corn steeping process. The method comprises the following steps of soaking pretreated corn in a soaking solution which contains vitamin C; crushing the soaked corn, and performing separation to obtain corn protein. According to the method disclosed by the invention, vitamin C is used to completely or partly replace SO2 in a conventional process for soaking the corn, and the soaking effect equivalent to that of the conventional soaking process is achieved, and when the vitamin C is used to completely replace SO2 in the conventional process to soak corn, all products are free of SO2 residues and international food standards can be met; all of corn germs, corn fibers, corn starch and corn protein obtained by reprocessing of the soaked corn can be directly eaten; no desulfurization treatment is required; so that the production processes are simplified; and in addition, the soaking solution obtained after soaking is rich in nutrients and can be developed as a nutritional beverage or food supplement, and the like.
