The optical fiber sensor comprises a fiber core and an air hole structure wrapping layer which wraps the fiber core; the optical fiber sensor is divided into a plurality of regions in the axial direction; thediameters of the fiber core in the regions are the same; the diameters of the fiber core in different regions are different; air holes of the air hole structure wrapping layer in different regions are filled with the same refractive index matching solution; and the optical fiber sensor is prepared by sectioning, melting and stretching the microstructure optical fiber, realizing the fiber core difference of the sections by controlling the melting degree of the sections, and finally filling the air holes of the stretched microstructure optical fiber with the same refractive index matching solution. According to the manufacturing method, the welding loss caused by a traditional welding integration method is avoided, and the integration number of optical fiber sensors is increased; and in addition, only one refractive index matching solution is needed for filling in the method, so that the manufacturing difficulty of the optical fiber sensor is reduced.
