The preparation method comprises the following preparation steps of: extracting pinolenic acid, preparing a core material solution, preparing a wall material solution, and encapsulating a microcapsule. By adopting the preparation method disclosed by the invention, the extraction rate of the pinolenic acid from pinenut oil is more than 70%, the pinenut oil pinolenic acid which is easily oxidized is microencapsulated to effectively prolong the quality guarantee period, and the encapsulation rate is more than 85%.
