The method comprises the following steps of 1) pretreatment of raw materials, namely crushing jasmine flowers, chrysanthemum flowers, honeysuckle flowers and sweet osmanthus flowers into powder with granularity of 60 to 100 meshes respectively, and mixing the jasmine flower powder, the chrysanthemum flower powder, the honeysuckle flower powder and the sweet osmanthus flower powder at the weight ratio of (1-2):(1-2):(1-2):(1-2) to obtain raw material powder; 2) digestion, namely charging the raw material powder in an extraction tank, adding water in an amount which is 10 to 15 times the weight of the raw material powder, soaking the raw material powder for 1 to 3 hours, performing reflux extraction for once to three times for 0.5 to 1 hour every time, performing filtration, and concentrating filtrate under reduced pressure at 50 to 55 DEG C to obtain a concentrated solution of which the concentration is 0.2 to 0.5g / mL based on the weight of the raw materials; 3) blending, namely uniformly blending the concentrated solution and vinegar at the volume ratio of 1:(10-20) to obtain a mixed solution; 4) filling and sealing and sterilization, namely filling and sealing the mixed solution by using a low-vacuum filling and sealing machine, and performing sterilization to obtain the flowery health vinegar by using a low-temperature pasteurization method.
