Abstract

The crisp snake melon production method comprises: 1) preparing snake melon with a maturity degree of 50-80%, and washing; 2) soaking into a sodium metabisulfite aqueous solution with a weight percentage of 0.01-0.05% for 10-20 days; 3) cutting into blocks after the washing; 4) carrying out mixing sousing on the snake melon and white sugar; 5) adding purified water, and soaking for 30-60 days; and 6) filtering out the snake melon so as to obtain the crisp snake melon, and packaging to obtain the finished product. With the method of the present invention, the raw material source throughout the year is ensured, the snake melon does not require the heat treatment, and the produced crisp snake melon has characteristics of green shape, crisp and delicious taste, and unique flavor.
