[0146] Samples of the final allulose syrup product were subjected to a range of pH and varying DS and temperature. Sodium metabisulfite and sodium citrate were added to another series of samples. Separate subsamples were taken at predetermined intervals and analyzed for carbohydrate composition, color, HMF, DS and pH.
