[0031] Example 1 and Comparative Examples A-D : Rheology

[0032] Aqueous solutions and dispersions of okara and / or fibrous pectin-containing preparations having the concentrations listed in Table 1 below were prepared as follows. Concentrations are by weight based on the total weight of the composition.

[0033] Okara powder and fibrous pectin products were used as they were without any drying before sample preparation. Okara was purchased from SunOpta, USA as SunOpta S-710. Fiber-containing pectin preparations in powder form are commercially available from Florida Food Products, USA under the trademark FiberGel LC. FiberGel LC was obtained according to the procedure described in US Patent No. 7,833,558.

[0034] Introduce a pre-weighed amount of water into a clean glass vial. The temperature of the water in the vial was adjusted to about 20°C with stirring using an overhead mixer. A pre-weighed amount (based on the sample composition) of okara powder and / or fiber-conta...

[0045] Examples 2 and 3 and Comparative Examples E-H: Use in Bean Cake

[0046] Bean cakes were prepared using the recipe listed in Table 3 below. Amounts are percent by weight based on the weight of the formulation.

[0047] The ingredients are as follows:

[0048] Soy 1 = Response TM 4401 soy protein, obtained from Dupont Corporation (Dupont Corporation);

[0049] Soy 2 = Response TM 4320 soy protein, obtained from DuPont;

[0050] Gluten = FP TM 600, modified wheat gluten from MPG Ingredients;

[0051] oil = vegetable oil;

[0052] spices = beef seasoning;

Abstract

Provided is a composition which comprises (a) okara or whole soy or a mixture thereof, and (b) a fiber-containing pectin product or pectin, wherein the weight ratio between components (a) and (b) is from 0.1 : 1 to 75 : 1. The composition is useful for increasing the cohesion of solid food, such as soy patties.

Description

technical field [0001] The present invention relates to a composition comprising (a) okara or whole soybeans or a mixture thereof and (b) a fibrous pectin preparation or pectin. Background technique [0002] Soybean is an important food crop used in a wide variety of foods. US Patent Publication US2010 / 0112187 describes imitation meat patties containing soy protein. The prophetic example discloses a simulated meatloaf comprising a soy protein composition, hexane-free protein granules, wheat gluten, organic soybean oil, methylcellulose, organic TVP (nutritional ingredients), organic okara, water, and Small amounts of additives such as salt. Okara and methylcellulose are known thickeners and / or binders. In a prophetic example, the amount of okara is 3% by weight and the amount of methylcellulose is 1.5% by weight, based on the total weight of the mock patty. In order to reduce the cost of a patty, it is often desirable to provide a patty formulation in which the amount of ...
