The invention provides a method capable of improving the heat stability of the cochineal pigment; and in the method, the cochineal is protected by jointly utilizing natural antioxidant oleuropein and bamboo leaf antioxidant, and the synergistic effect can beachieved; and meanwhile, beta-cyclodextrin and the cochineal form an inclusion compound, so that damage to the cochineal structure by heating under the acidic condition can be reduced, and the stability of the cochineal pigment is improved.
