Embodiment 1

[0031] A method for preserving raw milk with carbonated water, the specific steps are as follows:

[0032] ⑴Pretreatment: the CO in the cylinder 2 The gas is decompressed to 0.3MPa, and then washed through tanks containing potassium permanganate detergent with a mass concentration of 1% to 3% and sodium carbonate detergent with a mass concentration of 1% to 3%, and then adsorbed by an activated carbon tank. to complete the CO 2 Gas purification: Cool the filtered and ultraviolet sterilized water to 1-4°C, and perform vacuum degassing treatment at a vacuum degree of -0.04-0.06MPa for 0.4-2 seconds;

[0033] (2) Carbonation of water: CO 2 The gas is mixed with the sterilized and cooled water at 0.3-0.5MPa and 1-4°C. In this example, the gas-water ratio is 47g:100g to obtain carbonated water;

[0034] ⑶ Raw milk pretreatment: After collecting fresh raw milk, in order to remove oxygen and nitrogen in the raw milk and increase the mixing degree of carbonated water, the fresh raw...

Abstract

The invention relates to a method of using carbonated water for preserving raw milk. The method is performed in a system and includes the specific steps of (1) carbonation of water by mixing CO2 gas subjected to purification treatment with water subjected to sterile cooling, so that carbonated water saturated solution is obtained; (2) raw milk pretreatment by means of raw milk degasification, centrifugal raw milk purification and pre-pasteurization; and (3) spraying of the carbonated water to raw milk by spraying the carbonated water in the step (1) into the raw milk in the step (2), and uniformly mixing so that the raw milk prepared by the carbonated water preserving method is obtained. By the method of using the carbonated water for preserving the raw milk, the used carbonated water which is liquid is extremely easily mixed with the raw milk and can be well and uniformly mixed with the raw milk, and the addition quantity of the carbonated water can be flexibly adjusted according to different processing products, so that waste caused by escape of the CO2 gas can be avoided. The method is simple and easy to operate, preserving and processing costs are saved, and production efficiency of enterprises is improved. Additionally, the method is not high in requirements on cooling pressurization and spraying equipment and suitable for popularization of large-scale production of the enterprises.

Description

technical field [0001] The invention belongs to the field of food science and technology, and relates to a method for preserving raw milk, in particular to a method and system for preserving raw milk with carbonated water. Background technique [0002] Raw milk refers to the normal milk squeezed from the breasts of healthy dairy animals that meet the relevant national requirements without any change in composition. It can be used as processing raw materials to produce various nutritious dairy products, such as pasteurized milk, UHT milk, fermented milk, etc. Milk, cheese, etc. The quality of raw milk directly affects the quality of dairy products. The dairy products produced are rich in nutrients and are natural culture medium. They are easily spoiled and deteriorated. Deteriorated dairy products lose their edible value and even easily cause food poisoning. [0003] Milk and dairy products are rich in nutrients, and microbial contamination will seriously reduce the processa...
