Abstract

The invention discloses a method for quickly determining anthocyanin in a seed coat of a black peanut by using UPLC / MS / MS (Ultra Performance Liquid Chromatography / tandem Mass Spectrometry), belonging to the technical field of detection. The method comprises the following steps of (1) extracting anthocyanin in the seed coat of the black peanut, (2) purifying anthocyanin in the seed coat of the black peanut, and (3) analyzing and determining anthocyanin in the seed coat of the black peanut. With the adoption of the method, anthocyanin in the black peanut can be extracted quickly and fully, so that the kind and the content of different anthocyanin can be determined precisely; the method has an important significance in revealing a material basis and an action mechanism of an activity function of anthocyanin; and a theoretical foundation is provided for developing the peanut variety rich in anthocyanin content and improving the nutritional quality and a health-care function of the peanut.
