Abstract

The invention discloses a sweet potato flour gelatinizing method, and particularly relates to a method for gelatinizing sweet potato flour by using a low-temperature alkali solution as a solvent. The method comprises the following steps: with sodium hydroxide / urea / thiourea as a solvent system, firstly precooling 6-10% sodium hydroxide solution to -4 to 0 DEG C, adding the sweet potato flour, mixing so as to generate alkaline sweet potato flour; or mixing the sweet potato flour and the 6-10% sodium hydroxide solution, then cooling to -4 to 0 DEG C; and adding 3-12% urea / thiourea aqueous solution precooled to -4 to 0 DEG C, stirring and mixing so as to obtain the transparent sweet potato flour gelatinized by using the low-temperature alkali solution. The method has the advantages that the sweet potato flour comprising sweet potato starch and sweet potato celluloses can be rapidly and effectively dissolved, the sweet potato flour low-temperature alkali solution with high solubility can be obtained, and sweet potato resources are effectively utilized. The raw materials used in the method are simple; the preparation technology is simple; the solvent is easy to recycle; and no environmental pollution is generated in a dissolving process.
