The invention provides a control method and a control system of an engine, and a vehicle. The method comprises the steps of: detecting a knocking signal in a predetermined crank angle range; judging if the super knocking is generated according to the knocking signal; if the super knocking is generated, adjusting the oil spraying pulse width to reduce the burning temperature; judging if the super knocking is generated again within a preset time after the adjustment of the oil spraying pulse width; and if the super knocking is generated again, preventing the generation of the super knocking through reducing the burning temperature, reducing the maximal load and/or interrupting the oil supply according to thefrequency of the super knocking. The control method of the engine can effectively reduce or even eliminate the super knocking phenomenon of the engine, so that the engine is effectively protected, the service life of the engine is prolonged, and the vehicle safety is improved.
