Abstract

The invention discloses an extracting technique of natural beta-carotene from fresh carrot, which comprises the following steps: squeezing the fresh carrot; pouring the liquid into high-pressure homogeneous device to homogenize; adding CaCl2.2H2O as precipitant and ammonia or alcohol as stabilizer into the homogenized carrot liquid; draining the supernatant; obtaining the orange red sediment; drying the sediment through freezing drier; obtaining the powder; adding ligroine into the sediment to extract the beta-carotene; rotating; evaporating; condensing; recycling the organic solvent; obtaining the oil-shaped beta-carotene with purity over 90% and extracting rate over 80%. The invention saves the cost effectively, which provides reference value to study the extraction of beta-carotene from fresh carrot.
