Abstract

The invention provides a biological method for storing a sweet sorghum juice, which comprises the steps that: the newly pressed sweet sorghum juice is sent into an airproof tank and pumped into a sterilization tank for sterilizing by steam for 30-60min at the temperature of 60 - 90 DEG C after the pH value is adjusted to 4.5-6.5, then the juice is cooled to 10-25 DEG C and removed of sediment; the juice is added with an enzyme which accounts 0.01-0.1 percent of the weight of the juice and evenly stirred; then the newly acquired sweet sorghum juice is promptly pumped into the airproof tank provided with a unidirectional respiration valve for storage. The invention makes use of the process that a microbe grows slowly at low temperature and metabolizes towards single direction, and competitively restrains the growth of other microbes, thereby preventing the juice from deterioration. Experiments prove that the sweet sorghum juice stored by the biological method of the invention does not deteriorate for 3 months.
