[0116] Olive oil and water with a pH of 8.65 were added to a 500 mL beaker according to the oil / water ratio = 1:100 (by volume) (1 ml of oil and 100 ml of water). Alkaline water with a pH of 8.65 is added to neutral pure water by adding NaHCO 3And get. A mixture of olive oil and alkaline water was heated to 90°C at atmospheric pressure while stirring slowly using a magnetic stirrer. The mixture was heated at 90° C. with stirring for 30 minutes, and then the mixture was cooled to room temperature. Unreacted oil, if any, on the surface of the water is carefully removed. Then enough oil-soluble orange powder (CAS No. 3118-97-6; fat-soluble pigment, completely insoluble in water. From Sinopharm Chemical Reagent Co., Ltd., China) was added to the cooled water. The water with the oil soluble orange was then sonicated for 10 minutes. The resulting mixture was filtered through a 0.45 μm membrane to remove insoluble oil soluble orange particles. The absorbance of the formed filtra...

Abstract

The invention is about a method of increasing the solubility of fat-soluble nutrient in water. The method comprises a step (11) of increasing the pH of water to generate alkaline water with a pH of at least about 8.0; a step (12) of mixing the water with an edible oil to generate surfactant-containing water; a step (13) of adjusting the pH of the surfactant-containing water to a predetermined range; and a step (14) of combining the surfactant-containing water and substance containing the fat-soluble nutrient to produce food or drink. An apparatus for conducting the method is also provided.

Description

technical field [0001] The present invention generally relates to a method and apparatus for treating water. [0002] In particular, the present invention relates to an apparatus and method for increasing the solubility of fat-soluble nutrients in water. Background technique [0003] It is known that cooking oil is bad for health if consumed in excess. For example, if cooking oil is consumed excessively, the risk of heart attack increases. Therefore, reduction of consumption of cooking oil is desired nowadays. However, it is also known that it is sometimes necessary to use oil to dissolve fat-soluble nutrients or to extract fat-soluble nutrients from food or other substances. If cooking oil is used at very low levels, there may be insufficient solubilization or extraction of fat-soluble nutrients. Insufficient dissolution or extraction may in turn reduce the intake of this fat-soluble nutrient. It is desirable to use less cooking oil while maintaining dissolution or ext...
