Abstract

The invention discloses an acid-free fermentation method of using a starchy raw material to produce alcohol and belongs to the field of alcohol production. The method includes following steps: (1), cleaning the raw material; (2), subjecting the raw material to wet-process smashing to obtain size; (3), steaming the raw material at low temperature: steaming the raw material size at 90-100 DEG C for 2.5-3h to obtain liquefied mash; (4), saccharifying: adding 0.1-0.3kg of saccharifying enzyme into each cubic meter of the liquefied mash, and saccharifying at 56-60 DEG C for 50-60min to obtain saccharified mash; (5), performing acid-free fermentation: adding yeast accounting for 0.01-0.1% of weight of the raw material, and fermenting at 31-33 DEG C for 50-60h to obtain mature mash; (6), distilling to obtain edible alcohol; (7), adsorbing through a molecular sieve to obtain anhydrous alcohol. By the acid-free fermentation method, fermentation time is shortened, bacterial breeding is effectively inhibited or interfered for acid-free fermentation, and fermentation efficiency can be improved.

Description

technical field [0001] The invention relates to the technical field of alcohol production, in particular to an acid-free fermentation method for producing alcohol with starchy raw materials. Background technique [0002] In the traditional alcohol fermentation process, methods such as acidification with sulfuric acid and heat sterilization are usually used to inhibit miscellaneous bacteria. Heat sterilization can kill miscellaneous bacteria, but it requires additional equipment, consumes a lot of steam, has high operating costs, and is likely to cause sugar loss, so it is rarely used. Most of the current ethanol production processes adopt the method of acidification and acidification, and use sulfuric acid to adjust the pH value of the mash to 3.2-3.8 to inhibit the growth of miscellaneous bacteria. Due to the large amount of sulfuric acid, it will cause corrosion to the equipment, increase the sulfate content of the waste liquid, and increase the difficulty of environmenta...
