Abstract

The invention provides a fig freezing and thawing preservation method. A TPA and puncture experiment is performed on fresh figs picked from a Binzhou Zouping Shangzhi fig planting base. Under freezing and thawing conditions, at regular time intervals, the figs are taken out for measuring 7 texture parameters such as peel hardness, peel rupture distance and the like. All texture traits are significantly changed in the freezing and thawing processes. Peel brittleness, peel hardness, pulp hardness and the like appear similar change along with the increase of the freezing or thawing time; stability values of change curves of freezing and thawing texture characteristic values are similar, namely a freezing initial value is similar to a thawing final value. For the first time, about 3h is determined to be a texture change critical point in the fig freezing process, while about 40min is determined to be a texture change critical point in the fig thawing process, so that during processing, transportation and storage of the figs, after the figs are frozen for about 3h and thawed for about 40min, the texture characteristics of the figs are basically consistent with those of the fresh figs.
