Abstract

The invention discloses a nisin compound and application thereof in preparation of an antibacterial agent. The compound is prepared from nisin and monoglyceride in a mass ratio of 1:(0.1-5). The monoglyceride comprises glyceryl monostearate, glyceryl monopalmitate and glyceryl monooleate. According to the invention, monoglyceride and Nisin are compounded in water to obtain a compound of two substances, and high food safety can be maintained. Through compounding, the antibacterial effect can be obviously improved, the antibacterial effect on the tested gram-positive strain staphylococcus aureus and the compound is improved by 50% or above compared with that of Nisin with the same amount, and the antibacterial effect on the tested gram-negative strain escherichia coli and the compound is improved by 30% or above compared with that of Nisin with the same amount. Monoglyceride is a low-cost food raw material, and the compound also improves economic benefits.

Description

[0001] (1) Technical field [0002] The invention relates to an antibacterial agent, in particular to a nisin complex and its application in the preparation of an antibacterial agent. [0003] (2) Background technology [0004] Nisin, as a high-safety food preservative, has been approved for use in many countries around the world. Compared with other food preservatives, Nisin has higher safety and better antibacterial effect, so it has an ideal application prospect. In order to improve the antibacterial effect of Nisin, domestic and foreign scientific and technological personnel have carried out many explorations, but none of them have achieved an effective method for improving the antibacterial effect of Nisin. The invention adopts the compound of monoglyceride and Nisin, and the antibacterial effect of the compound on Gram-positive bacteria and negative bacteria is higher than that of Nisin. Monoglyceride is a food raw material, and the combination with Nisin does not affec...
