[0102]Arla Whey Protein Hydrolyzate (WPH) was obtained in three powdered forms from Arla Foods Ingredients amba Nr. Vium DK-6920 Videbaek Denmark. Combine 80 mL of reconstituted powdered WPHs containing approximately 1.625 grams of protein and 80 mL of reconstituted Nestle GOOD START also containing approximately 1.625 grams of protein TM , digested in vitro in parallel with reagent blanks according to the methods described herein. Amino acid profiles were determined to obtain the total digest and the soluble fraction of the digests described herein. The amino acid distribution is shown in Table 1. A comparison of protein digestibility is shown in Table 2.

[0109] Three low-iron SIMILAC TM Sample and three kinds of Nestlé GOOD START TM Each of the powdered milk samples was reconstituted with water, and 80 mL of each reconstituted contained approximately 1.625 grams of protein. Formula samples were digested in vitro in parallel to reagent blanks according to the methods described herein. The previously described in vitro digestion method mimics the digestive system of a young infant with respect to the parameters pH, presence of enzymes, and digestion time. Amino acid profiles and tryptophan concentrations were determined for total digestion and the soluble fraction of digestion as described herein. An example of amino acid distribution is shown in Table 3. The protein digestibility calculations described herein were performed. A comparison of the digestibility of proteins is shown in Table 4.
