Embodiment 1

[0043] Embodiment 1: raw material of the present invention comprises glucose monohydrate 88%, citric acid monohydrate 1%, sorbitol 11%, and processing step is as follows:

[0044] 1. Ingredients: Glucose, citric acid, and sorbitol are used for ingredients according to the above proportions.

[0045] 2. Polycondensation reaction: The raw materials do not need to be dried and directly enter the preheated reaction kettle for polycondensation reaction at high temperature and high vacuum. The temperature is 180°C, the degree of vacuum is -0.075Mpa, and the time is 2.5 hours to form a polymer. The whole polycondensation reaction is carried out in a reactor with frequency conversion motor stirring. The glucose content measured by high pressure liquid phase was 3.0%, and the polydextrose content was 93%. Tasting products had a good mouthfeel without unpleasant bitterness.

[0046] 3. Dissolving sugar solution: After the polycondensation reaction is completed, a certain amount of wa...

Abstract

The invention discloses a production method of polydextrose. The method is characterized by reducing production of by-products by enhancing vacuum degree and obtaining the product with good taste, overcoming the disadvantages of a plurality of by-products due to reaction at low vacuum degree and undesired bitter taste of the former products, and reducing cost of production equipment. A whole polycondensation reaction process occurs in a reaction kettle with variable-frequency motor mixing, thus ensuring evener polymerization reaction of products, less by-products, lower content of monosaccharide in the products, and thorough polymerization reaction.

Description

technical field [0001] The invention relates to a method for producing polydextrose. Background technique [0002] Polydextrose products are formed by polycondensation reaction of glucose, sorbitol and citric acid under high temperature and high vacuum conditions. Chinese patent 03126106.1 mentions a polydextrose polymerization production process: the temperature is controlled between 50 and 300 °C , the time is 1 to 15 hours, and the degree of negative pressure and vacuum is respectively controlled at -0.02 to -0.06 MPOL to form polymers. A certain amount of water will be produced during the polymerization reaction of polydextrose, and the low vacuum will remove the water in a short time to accelerate the reaction process, but the cost will increase accordingly. On the contrary, increasing the vacuum degree will cause too much moisture to accumulate and affect the reaction process, and then the reaction temperature must be increased. During the high-temperature polymerizat...
