The invention particularly relates to a formula of modifying an oil-soluble lutein ester into the water-soluble lutein ester and a technology thereof. The method comprises the following steps: adding commercial lutein ester, vegetable oil and an antioxidant based on a weight ratio of 1:2-10:0.01-0.03 into a mixing cylinder; heating to 60-90 DEG C, and uniformly stirring and thermal insulating for 10-20 minutes to obtain a uniform mixed liquor A; while stirring, adding a hydrated agent which is preheated to 50-80 DEG C, and thermal insulating and stirring at the temperature of 55-65 DEG C for 1 hour to obtain a mixed liquor B; adding a diluter, which is preheated to 40-80 DEG C, into the mixed liquor B; and uniformly stirring at 55-65 DEG C, and naturally cooling to below 30 DEG C to obtain the stable water-soluble lutein ester. The invention has the advantages of simple technology, strong adaptability and easy large-scale industrial production.
