The Pleurotus citrinopileatus protein extractive is prepared by a method including the following steps of: (1) carrying out lixiviating by utilizing water after crushing Pleurotus citrinopileatus sporocarp, collecting water-soluble matters, so as to obtain Pleurotus citrinopileatus water-soluble extractives; and (2) carrying out ammonium sulfate precipitation with the saturability of 80% on the Pleurotus citrinopileatus water-soluble extractives, collecting precipitates, and obtaining the Pleurotus citrinopileatus protein extractive after carrying out deionized water dialysis on the precipitates.
