Abstract

The invention relates to a mineral substance compound protein edible membrane which comprises gelatin, whey proteins and mineral substances. A preparation method comprises the following steps: protein swelling; sol formation; suction filtration and degassing; membrane formation by a tape casting method; drying; membrane uncovering; neatening. The tensile strength and elongation at break of the edible membrane are remarkably improved through a synergistic effect of the mineral substances added and the proteins, so that the membrane is stable in property and quickly absorbs water in hot water to be dissolved. The whey proteins are high in nutritional value and easy to digest and absorb and contain various active components, so that the mineral substance compound protein membrane is safe, healthy and easy to absorb. The mineral substances are further added to realize the functions of supplementing calcium and strengthening skeleton. In addition, with increase of weight of the mineral substances, the cost can be lowered. The membrane can be used as an edible packaging material of a seasoning package in foods such as instant noodles, so that the membrane has good market development prospect.
