Abstract

The present invention provides a method for manufacturing the milk powder. The method comprises the following steps: (1) pretreating raw milk; (2) dissolving ingredients in water, fully stirring them evenly to obtain an ingredient solution; (3) mixing the treated raw milk and the ingredient solution uniformly to obtain a mixed solution; (4) homogenizing the mixed solution, and then conducting sterilization and concentration to obtain concentrated milk; and (5) then adding glutamine transaminase accounting for 0.02-0.08% of the mass of the concentrated milk, stirring the substances evenly, and keeping reaction, and then performing spray drying to obtain milk powder. The method provided by the invention uses glutamine transaminase to replace a thickening agent, and protein reacts to generate a grid structure, so that after brewing the milk powder, the milk liquid has suspension function, the anti-precipitation effect of the milk liquid obtained by brewing of the milk powder can be significantly improved. By adding sodium citrate, the stability of concentrated milk can be increased, the action time of glutamine transaminase is shortened, and its action effect is increased. The method provided by the invention provides a new solution for precipitation prevention of milk powder.
