The method comprises the following steps: washing raw ginger, shredding, and draining; extracting in an thermostat water bath for 0.5-4h at 60-100 DEG C; extracting juice in a juice extractor from the raw ginger shreds and extract thereof, and filtering to obtain a ginger juice stock solution; putting the ginger juice stock solution into an enzymatic vessel, adding complex enzyme which is 0.02 percent of mass of the ginger juice stock solution, performing enzymolysis at 35-70 DEG C for 25-100 minutes, and properly concentrating; and mixing the enzymatic hydrolysate and roasted barley tea in a mass ratio of (0.5-2):1, and adding 5 mass percent of brown sugar, 0.7 mass percent of gelatin, 0.04 mass percent of pectin and 0.12 mass percent of sodium alginate, and uniformly stirring. According to the method, the ginger-cola mate with unique flavor is developed based on precipitate controlling, and a ginger-cola mixed drink with a new flavor is obtained after the mate is mixed with cola in a proper ratio.
